Sorghum
I finally was able to shoot these pictures in Uzès, southern France in mid-September. Fields of these plants are few and far between, and up to this year it had not been possible to stop at a field to snap a couple of shots. So the nature of this plants remained a mystery to me for a couple of years. But now, after some research with the pictures and the seed helm, or pod, or whatever, I am pretty certain that the plant is sorghum.

I have good reasons to agree, for someone else (a woman, so for sure another approach, haha) did research too, and came to the same conclusion : a species of sorghum it is!
